Elaboration & ageing
Gravity-fed, de-stemmed harvest. Sulfur-free vinification in concrete vats with indigenous yeasts, in stainless steel tanks. Maceration for 10 days. Aged 6 months in stainless steel vats. Light sulfiting and filtration at bottling. Total SO2: 13mg/l.
