Hand-picked.

Elaboration & ageing
Gravity-fed, de-stemmed harvest. 1-month maceration and vinification without sulfur using indigenous yeasts in amphora. Aged 12 months in terracotta amphora. No filtration, SO² at bottling
. Total SO2: 40mg/l.
