Gravity-fed, de-stemmed harvest. Vinification in wooden vats, sulfur-free with indigenous yeasts. Manual punching down. Long vatting. Aged 18 months in new barrels. Light sulfiting and filtration at bottling. Total SO²: 11 mg/L
